White Christmas Pie is a decadent dessert that is the highlight of every Christmas eve. A crusty home-baked pie shell, filled with a creamy custard with hints of pineapple, coconut, and almond, topped with cream and a side of fresh strawberry compote.

Before I unravel the secret to this recipe, you must agree to use fresh produce.

Fresh produce is the only way you will be able to attain that perfect match of taste and texture. Fresh cream, fresh fruits and if possible, freshly churned butter!

You’ll be surprised to see the difference it makes!

Now let’s head straight to the recipe but first, have a look at the equipment that is needed for this recipe

  1. An electric beater, to whip up the custard and heavy cream.
  2. Round pie trays, for baking the crust.

White Christmas Pie is a family favorite, decadent and crusty pie filled with a pineapple and almond flavored custard, with flaky coconuts and heavy cream on top, and a side of sweet strawberry compote

Ingredients

  • For making the Pie Crust
  • 1/3 cup of freshly churned butter

  • 2.5 cups of vegetable shortening, cold

  • 1.5 cups of flour

  • 2 tsp granulated white sugar

  • 1/2 tsp salt

  • 2 tbsp ice-cold water or as needed

  • For the Filling
  • 2.5 tsp of powdered gelatin

  • 1/4 cup of water

  • 1/4 cup of flour

  • 1/3 cup of granulated white sugar

  • 1/4 tsp of almond extract

  • 1/4 tsp of vanilla extract

  • 1/2 cup of heavy cream

  • 3 egg whites

  • 1/4 tsp of cream tartar

  • 1/3 cup of fine sugar

  • 2 cups of shredded coconut

  • 1 cup of thinly sliced pineapple

  • Topping
  • 2 cups of heavy cream

  • 1/2 cup of shredded coconut

  • 1/2 cup of sliced almonds (optional)

  • Strawberry Compote
  • 2.5 cup of strawberries

  • 3 tbsp of granulated white sugar

  • 2 tbsp of orange juice or lemon juice

  • 2 tbsp of water

Directions

  • For Pie Crust
  • Begin by cutting the block of butter into small pieces. Place the pieces in the freezer for a few minutes while you work on the next step.
  • Put the flour, sugar and salt into a food processor and pulse 2 to 3 times or until combined.
  • Next, add the cold vegetable shortening and pulse. Then add the frozen butter and pulse until combined. Next, add water and pulse until the dough starts coming together.

    Tip: In case the dough isn’t forming, add some more water and pulse.

  • Pour the dough out on a floured surface and knead. Now wrap in cling film and set in the fridge for half an hour.
  • Once set, take the dough out and roll out a 12” circle. Now place the rolled out dough over a 10” pan and using your palms press it in and over the edges, gently. Cut up any extra dough over the edge and keep in the freezer for another 20 to 30 minutes.
  • While the dough sets, pre-heat the oven at 375 degrees.
  • Once set, place a parchment paper over the dough, along with beans and set to bake for 20 minutes.
  • Take the pan out of the oven and remove beans and parchment paper. Puncture the base of the pie, with a fork and bake again for 15 minutes or until the crust turns golden and crispy.
  • Cool on a cooling rack before adding any filling.
  • Filling
  • In a bowl add water and gelatin and let it sit until dissolved.
  • In a saucepan, over medium-high heat, add ⅓ cup sugar, flour, milk and salt. Bring to a boil and let it bubble for another minute.
  • Add in the dissolved gelatin and whisk over medium heat for another minute.
  • Remove from heat and add vanilla and almond extracts.
  • Cool the mixture down, by putting the saucepan over a bowl filled with ice.
  • While the mixture cools, in a bowl whip up half a cup of heavy cream and set aside.
  • In another bowl add egg whites, cream of tartar, ⅓ cup sugar and beat until it forms stiff peaks.
  • Now using the electric beater, whip up the cooled mixture as well.
  • Now in a large bowl, combine all three, cooled and whipped mixture, beaten eggs and sugar, and whipped heavy cream.
  • Add the shredded coconut and sliced pineapples and fold the mixture, using a rubber spatula.
  • Now pour the mixture into the baked and cooled pie crust.
  • Topping
  • In a bowl whip up 2 cups of heavy cream.
  • Fill a piping bag with the whipped cream, and using a star nozzle, decorate over the pie.
  • Sprinkle the sliced almonds and shredded coconut on top of the cream.
  • Strawberry Compote
  • Wash and strain the strawberries. Remove the stem and cut into half.
  • In a saucepan, add the strawberries, sugar, orange/lemon juice along with water.
  • Bring to a boil on medium-high heat and then let simmer on low heat until strawberries turn soft.
  • Cook for another 10-15 minutes or until you achieve the desired consistency.
  • Top Servings
  • White Christmas Pie is best served with a strawberry compote. In case you are not a fan of strawberries, you can use any fruit of your liking. Some of the fruits that go well with this pie are peaches and raspberries. You can also try blueberries
