I have this place in my heart for ugly produce. I really do. Remember my love for rutabagas? It’s like, the uglier the fruit or vegetable the more I want to take it and make it into a Swan of a dish. But here’s the thing. Often these ugly duckling of a produce have so much nourishment inside. It’s what’s inside that counts, right? Hehe.Is that too corny or what?

Take this Carrot Celeriac Spiralized Vegetable Salad. It looks so pretty, healthy, and tasty, right? Please say yes.

But this spiralized salad did not start off looking like this.

Celeriac (also known as Celery Root) actually looks like this (below). GASP!

It’s like I pulled a misshaped turnip out of the grown and the sliced off his green mohawk (aka the “celery” stem). Oh poor celery root. I mean celeriac. Not only is it ugly, but it’s name sounds like a disease. But it actuality, this vegetable can help cure disease! How about that for awesomness?!

Fact! Celeriac has a taste that is similar to a blend of celery and parsley. Plus it contains some prettySUPER root vegetable nutrients.

Health benefits of eating Celeriac (celery root):

  • First of all, it’s pretty low in calories and carbs. So it’s a great replacement for those looking to lighten up or “spring clean” their meals. It can be used as a mash, in soup, and of course… SPIRALIZED SALAD! Which is more fun anyway.
  • Second, celeriac contains a good amount of Vitamin K. Which is vital for our bone health! Vitamin Kimproves bone mineralization by promoting bone BOOSTINGfighting activity (all within the bones).

Description

A Vegan and Paleo friendly spiralized salad tossed in a light olive oil mustard dressing. SEE NOTES for options if you don’t have a spiralizer.

Ingredients

Scale

  • 2 large carrots (peeled)
  • 1 medium celery root/celeriac bulb (peeled) – See notes for alternative vegetables
  • 2 Tablespoons dijon mustard
  • 2 Tablespoons olive oil
  • 1 Tablespoon apple cider vinegar (or red wine vinegar)
  • 1 teaspoon honey or agave nectar (maple syrup is fine too. It’s just for a sweetener) – omit for whole 30
  • ½ of a lime (juiced)
  • ½ teaspoon black pepper
  • ½ teaspoon sea salt
  • 3 Tablespoons or more or roasted pumpkin seeds
  • 23 Tablespoons chopped parsley

Instructions

  1. First clean the vegetables. Cut off the tops to both carrot and the celeriac and peel with a peeler.
  2. Place in spiralizer and spiral all the vegetables. If you don’t have a spiralizer, you can just use a grater or julienne cut.
  3. Place noodles in bowl and add in all the ingredients minus the parsley and seeds.
  4. Toss the noodles with the marinade and let it sit in the fridge for 20-30 minutes.
  5. Once it’s marinated in fridge, remove and add the parsley and pumpkin seeds.
  6. Serve immediately or keep in fridge for later.

Notes

Don’t havespiralizer?Simply julienne cut the vegetables.

Don’t have celeriac available? No problem! Try turnips, Jicama, or Daikon radish.

We love making this salad alongside roastedchickenor bakedchicken. It’s a perfect potluck side or side dish for Easter…. just sayin.

That being said, but you can easily eat this as it. Although, you’re gonna want to go back for seconds or thirds, so you better make that a double celeriac salad. Just sayin….

This salad literally takes 10 minutes to make with no cooking required. YAY! It’s also paleo, whole30 approved,vegan, yada yada yada. ..

But most importantly… it’s FLIPPING GOOD!
